For any of you who missed last week’s post, I tried making homemade apple cider (really homemade — starting with apples galore!) for the first time this fall. And cannot tell you how much we’ve been enjoying it!!

Of course, it has made its way into a few other recipes as well, including this yummy apple cider vinaigrette I wanted to share with you. The recipe is super-simple, and just takes a few minutes to make. Definitely one to bookmark and pull out whenever you have good-quality apple cider on hand! I’ve already tried it with a few different salad combinations (some more sweet, some more savory), and loved it on each one.

Apple Cider Vinaigrette

Makes: 1 -2 cups vinaigrette
A simple and irresistible Apple Cider vinaigrette recipe you’ll love! Simple to prepare and ready to be enjoyed in less than 5 minutes.

Ingredients

  • 1 cup apple cider, homemade or store-bought
  • 1/2 cup olive oil
  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. honey or agave nectar
  • 1/4 tsp. salt
  • 1/4 tsp. freshly-ground black pepper
  • pinch cinnamon (1/8tsp or less)

Instructions

  • Whisk all ingredients together.  (Or pour in a tight-fitting jar and shake until combined.)  Serve immediately, or store in the refrigerator for up to one week.

    Apple seeds contain a small amount of cyanide but as long as they are not cracked they are fine. Same for cherry pits. It would take alot to kill you but I would remove them just to be safe since they will be heated.
