Just when I thought I had tried every rice crispy treat recipe under the sun….this recipe shows up on StumbleUpon.

I may or may not have immediately run to the store to by a cake mix to make it.

And…had a little too much fun playing with those gorgeous, colorful sprinkles.

And…enjoyed every single, glorious, hint-of-cake-batter-flavored bite.

And…shared the rest with friends so that I didn’t eat too many bites.

And…now I share it with all of you.

And…you should make some.

:)

You will love this bright and colorful cake batter rice crispy treats recipe! Great for special occasions!

Ingredients

  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions

  • Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, then remove from heat. Whisk in the (dry) cake mix, then stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and briefly stir. (Don’t stir too much or the sprinkles will bleed out their color.) Press the mixture into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them cleanly.
  • *Disclaimer: You consume dry cake mix at your own risk.*

CATUION ! The Food Safety News has found that dry flour ( as in dry cake mix ) can contain E coli.

I use leftover cake mix from things like this to make a small dump cake with canned peaches in pear juice. I just pour 2 cans of peaches, juice and all, into a small-ish buttered baking dish (slice if they aren’t already), sprinkle them lightly with cinnamon and nutmeg, distribute the cake mix over them evenly, cover that with little thin slices of cold butter, then bake at 350F until it’s bubbly and the top is caramelized, about 45 minutes.

You just have to make sure the cake mix is well covered with the butter. It’s not that you need a lot, it’s that any cake mix left untouched by butter won’t necessarily caramelize. The edges will bubble up, but you need good butter coverage everywhere else. So, lots of very thin slices. Otherwise, it’s very easy to make and good on a cold night. We usually just pour a bit of cold heavy cream over it, but it’s good with ice cream or whipped cream too.

Is it safe to consume raw cake batter without baking? I thought it needed to reach high temperatures to be safely eaten?

You are not putting egg in the batter so eating just plan batter you will be ok..your not suppose to consume raw cookie dough or anything with raw egg..but i have been eating cookie dough and cake batter my whole life and i am just fine!

Thanks for this recipie! I just made this and wanted to share my tips! Anytime I make Rice Krispies I use about 1T. more butter than it calls for and I use between 1/2-1cup LESS cereal. I don ‘t like my rice krispies getting hard! Oh and I used 1/2 cup of the cake mix!

Remaining cake mix can also be mixed with an egg and a little cool whip (enough to be a stiff batter) and then drop one spoon at a time into powdered sugar then bake at 35o for 10-12 mins. They’re even lighter than using the oil and they’re so yummy!

You can also combine cake mix, just the DRY mix, add one egg, container of cool whip..and make cookies. I coat with powdered sugar. You can also take a yellow cake mix, (leftover)..can of pumpkin..eyeball it based on what you have left over and egg (feel free to omit egg, muffin will just be dense)..bake in muffin tin..voila..best pumpkin muffin EVER. The mix is dense and heavy to mix…but well worth it. FYI – cake mix really doesnt need ANYTHING but liquid to be a cake. Egg just makes it springy

Julia–just the cake mix as it comes out of the box–do not add anything to it.
