At my most recent book club, my friend Kerry served a delicious tomato basil bruschetta. And I have been craving all things caprese ever since. So this weekend, I gathered some fresh ingredients from the market and decided to create a new appetizer — Caprese Phyllo Cups!

These simple little phyllo cup appetizer could not be easier. All you need are five ingredients — any kind of tomatoes, mozzarella, fresh basil, balsamic vinegar, and of course, my favorite little phyllo cups (or you can make baked cups with wonton wrappers). And less than ten minutes later, you can have an entire batch ready to serve and enjoy. So quick and easy. And so fresh and delicious!

I’m already looking forward to making these again. I have a little hunch that may happen a lot this summer. ;)

5-Ingredient Caprese Phyllo Cups

Cook Time: 5 minutes
Total Time: 15 minutes
Makes: 15 cups
A quick and easy appetizer for caprese lovers!

Ingredients

  • 1/2 cup balsamic vinegar
  • 1 (15-count) package mini phyllo cups
  • 15 grape or cherry tomatoes, halved
  • 4 ounces fresh mozzarella, diced or torn into small pieces
  • 4 large fresh basil leaves, torn into small pieces

Instructions

  • Bring balsamic vinegar to a boil in a small saucepan over medium-high heat. Reduce heat to medium-low and simmer for about 3-5 minutes, or until reduced by half. Remove from heat.
  • Portion the tomatoes, mozzarella and fresh basil between the phyllo cups. Drizzle with the reduced balsamic vinegar. Serve immediately.
