Tuna Chickpea Salad:
1(15-ounce) can chickpeasrinsed and drained
2(5-ounce) cans tuna packed in olive oildrained
8ouncesEnglish or Persian cucumbersfinely-chopped
1/3cupcrumbled feta cheese
1/2cupfinely-chopped red onion
1/3cuptoasted pine nuts or sliced almonds
2tablespoonschopped fresh dill
Lemon Tahini Dressing:
3tablespoonstahini (plus 3 tablespoons water)
1tablespoonolive oil
1teaspoonDijon mustard
1/4teaspoonground cumin
1/4teaspoonfine sea salt salt plus a few twists of black pepper
zest and juice of 1 lemon (~2 to 3 tablespoons juice)
Instructions
Make the dressing. Whisk together the dressing ingredients in a small bowl until evenly combined.
Make the salad. Combine all of the salad ingredients in a large bowl. Drizzle evenly with the dressing and toss to combine.
Season. Give the salad a taste and season with additional salt, pepper and/or lemon juice if needed.
