Just when I thought I had tried every rice crispy treat recipe under the sun….this recipe shows up on StumbleUpon.

I may or may not have immediately run to the store to by a cake mix to make it.

And…had a little too much fun playing with those gorgeous, colorful sprinkles.

And…enjoyed every single, glorious, hint-of-cake-batter-flavored bite.

And…shared the rest with friends so that I didn’t eat too many bites.

And…now I share it with all of you.

Cake Batter Rice Crispy Treats

Makes: 12 -16 servings
You will love this bright and colorful cake batter rice crispy treats recipe! Great for special occasions!

Ingredients

  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions

  • Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, then remove from heat. Whisk in the (dry) cake mix, then stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and briefly stir. (Don’t stir too much or the sprinkles will bleed out their color.) Press the mixture into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them cleanly.

    This is seriously the best thing ever! I too, increased the cake batter to 1/3 cup and I also added a 1/2 c of butter cream frosting to the marshmallow mixture. It really pit the cake btter flavor over the top I can honestly say that I will never make rice crispie treats any other way. Hanks for sharing.

    Made this tonight, tasted a bit of it while still warm, we very sweet, I’m sure the kids will love it.
    About what to do with the leftover cake mix. I saw this recipe on pinterest for cobbler.
    24 oz Frozen mixed berries, cake mix and a can of diet 7-up/sprite. Put berries in pan, sprinkle cake mix over the top, slowly pour soda over it all, don’t stir. Bake at 350 for 45 minutes. I haven’t tried the recipe, but looks awesome.

    The gaggle of recent high-school grads (both boys and girls) who came for a swim party today were happily consoled with a plate full of these and a deck of cards. Made as you suggest (with the 1/3 cup cake mix), it filled a 7 x 11 pan, just in case any one wonders! Thanks for sharing the recipe!

    You can also mix the remaining cake batter with egg, oil and a bit of water and make cake waffles. They are so good with ice cream!

    I just found this recipe on Pinterest and decided to make them for the kids I nanny for today. I used red,white and blue sprinkles for Memorial Day Spirit.     Made these last night – 5 T butter, 1 bag marshmallows and more like a heaping 1/2 cup of funfetti cake mix – they were great! I added the cake mix as I was melting the marshmallows so it blended in without a problem. Enjoy!

      If you have a smart phone you can use an app called fitness pal to add a recipe too and it can calculate the nutrition information per serving.
