Golden, Buttery Roasted Cabbage

Cabbage definitely seems to be having a moment lately, and I am here for it. ♡

It’s hearty, budget-friendly, packed with nutrients, and endlessly versatile. But in my opinion, there’s nothing better than roasting it. The high heat transforms those crisp pieces into deeply golden, caramelized bites with tender, almost buttery centers and perfectly crispy edges. I’ve served this to more than a few friends who were convinced they “weren’t cabbage people,” and every single one of them went back for seconds. It’s surprisingly irresistible!

This version keeps things beautifully simple — just olive oil, smoked paprika, garlic, salt and pepper. Roast it under high heat, maybe broil for a minute if you want a little extra char, then finish with a squeeze of lemon or a shower of Parmesan.

Fair warning: I can never seem to stop sneaking bites straight off the sheet pan whenever I make it. I have a feeling you’re going to love it too!

Variations To Try

There are endless ways to season and serve roasted cabbage, so feel free to customize the recipe below with any of these twists:

  • Make it spicy with a pinch of red pepper flakes or chili crisp.
  • Swap smoked paprika for curry powder for a totally different vibe.
  • Drizzle with balsamic glaze for a sweet-savory finish.
  • Toss in some sliced red onion before roasting for extra flavor.
  • Add crispy bacon bits for a smoky, savory vibe.
  • Finish with fresh herbs like parsley, dill, or thyme for a pop of freshness.

FAQ

can i use red cabbage instead of green?

Yes! Red cabbage works beautifully. The flavor is similar, and it turns even more vibrant as it roasts.

how do i keep it from getting soggy?

Make sure the cabbage is dry before roasting and avoid overcrowding the pan. High heat here is key!!

can i make this ahead of time?

You can roast it ahead and reheat in a hot oven if you’d like to re-crisp the edges. It’s definitely best fresh, but leftover roasted cabbage is still delicious.

This easy roasted cabbage recipe features tender cabbage tossed with olive oil, smoked paprika, and garlic, then roasted until perfectly caramelized with irresistibly crispy, golden edges.

Ingredients

  • 1 medium head green cabbage (~2 pounds), cored and chopped into 1½-inch pieces
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon fine sea salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly cracked black pepper
  • optional toppings: fresh lemon juice, grated Parmesan

Instructions

  • Heat the oven. Preheat oven to 425°F (220°C).
  • Season the cabbage. Add the cabbage pieces to the baking sheet. Drizzle with olive oil, sprinkle evenly with salt, pepper, garlic powder, and paprika, and toss until evenly coated. Spread into a single, even layer on a large baking sheet.
  • Roast. Roast for 20–25 minutes, tossing once at the 15-minute marker, until the cabbage is tender with deeply caramelized, browned edges.
  • Optional broil. For extra color and crispiness, broil for 1–2 minutes, watching closely.
  • Finish and serve. Remove from the oven and finish with any desired toppings. Taste and adjust seasoning as needed. Serve warm and enjoy!
