Just when I thought I had tried every rice crispy treat recipe under the sun….this recipe shows up on StumbleUpon.

I may or may not have immediately run to the store to by a cake mix to make it.

And…had a little too much fun playing with those gorgeous, colorful sprinkles.

And…enjoyed every single, glorious, hint-of-cake-batter-flavored bite.

And…shared the rest with friends so that I didn’t eat too many bites.

And…now I share it with all of you.

Cake Batter Rice Crispy Treats

Makes: 12 -16 servings
You will love this bright and colorful cake batter rice crispy treats recipe! Great for special occasions!

Ingredients

  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions

  • Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, then remove from heat. Whisk in the (dry) cake mix, then stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and briefly stir. (Don’t stir too much or the sprinkles will bleed out their color.) Press the mixture into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them cleanly.

    I grew up eating rice krispy treats made w/peanut butter added, then topped w/a mixture of choc chips, butterscotch chips, and more peanut butter melted (you stir together in a double boiler). Man was I ever surprised people really ate those plain old rice krispies. But to add cake batter to them, now that might work for me. Can’t wait to give these a try.

    Another suggestion for the left over cake mix….add some plain yogurt and cool whip to it and make cake batter dip. Eat with graham crackers, chocolate wafers. your finger!!..I’m addicted to the stuff. I can’t wait to try these treats.

    Mine turned out extremely hard and I followed your instructions and recipe completely! How can I soften them? My toddler couldn’t eat them they were so hard :( also could I substitute marshmallow creme rather than the marshmallows?

    Made these and they were AWESOME. I used 1/2 c of cake mix and 4 Tbsp butter. 5 of us polished them off straight away!

    I use a pizza cutter to cut my rice krispies treats…and if you wet your hands before pushing them into the pan, they don’t stick to the treats so its easier to spread them.

    Man, these are great. I also used 1/3 cup of cake mix. I have a vacuum seal so I just sealed up the left over cake mix until I make these again, which will be very soon!
    To those of you that are getting hard treats. One, make sure your ingredients are fresh and two, do not over cook the marshmallows. The longer you cook them, the harder they turn out. And stir often. Enjoy!

    I used 1/2 cup of cake mix and it just wasnt enough! i couldnt tast it, next time i might try a cup, hopefully its not too much!
