Just when I thought I had tried every rice crispy treat recipe under the sun….this recipe shows up on StumbleUpon.

I may or may not have immediately run to the store to by a cake mix to make it.

And…had a little too much fun playing with those gorgeous, colorful sprinkles.

And…enjoyed every single, glorious, hint-of-cake-batter-flavored bite.

And…shared the rest with friends so that I didn’t eat too many bites.

And…now I share it with all of you.

Cake Batter Rice Crispy Treats

Makes: 12 -16 servings
You will love this bright and colorful cake batter rice crispy treats recipe! Great for special occasions!

Ingredients

  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions

  • Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, then remove from heat. Whisk in the (dry) cake mix, then stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and briefly stir. (Don’t stir too much or the sprinkles will bleed out their color.) Press the mixture into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them cleanly.

    Another great idea for the left over cake mix is to make a dump cake, super easy, super yummy.
    empty 1 can of cherry pie filling and 1 can of crushed pineapple into a casserole dish. Sprinkle dry yellow cake mix on top and moisten with melted butter, bake on 350 15 min/until golden brown on top

    I have learned there is GF cake mix..what about the rice crispies that would still be a concern for GF cooking …yes or on?

      Yes, rice krispies contain gluten. But they sell a box of gluten free rice krispies now!

    found this on pinterest. is there any reason to use whole marshmallows instead of marshmallow fluff? seems a bit easier to use the fluff over sitting over the stove melting them.

      It really doesn’t take that long to melt the marshmallows over low heat. It took maybe 2 minutes.

    Another thing you can make using the leftover cake mix is Cake Batter Chex Mix. I havent actually made it, but it sounds delicious!

    I’m gladd i ran across this recipe. Going to a “dinner on the grounds” at local church soon and needed something summery to take. And easy, and cheap. lol. that’s me summery, easy, and cheap. All kidding aside, I will make this when i have someone to share it with because I dont need to eat too much of it.
